Ginger Swai with Curry Rice and Lima Beans

3 Swai fillets

1 teaspoon ginger

1/2 teaspoon of garlic

1 large onion

1 medium red bell pepper

1/4 teaspoon black pepper

2 Tablespoons vegetable oil

1 cup white or brown rice

1/2 cup of mixed vegetables

1/2 teaspoon salt

1/8 teaspoon accent

1/8 teaspoon season salt

3 teaspoons curry powder

1 package of frozen lima beans

Directions:

Swai

  • Slice the pepper and onion and put aside
  • In a large skillet heat up the oil and place the thawed Swai fillets and cook on medium heat.
  • Place the cooked fish in a dish.
  • Saute onion and pepper on the same heated skillet used to cook the fish for about 5 minutes.
  • Add ginger, garlic, accent, season salt and cook for another 5 minutes.

Curry Rice

  • Get a medium pot and place rice and 2 cups of water.
  • Add, curry powder and salt
  • Cook on medium heat until the rice gets fluffy.

Lima Beans

  • Steam a bag of frozen lima beans for several minutes.
  • Scoop some rice on a dish and gently lay the fish on and add the pepper and onion mixture.
  • Add the lima beans on the side and you are ready to eat a yummy healthy meal.
