Tri-Color Rotini Salad


  • 1 Pack Tri-Color Rotini
  • 1/4 cup parsley flakes
  • 3/4 teaspoon dill
  • 1/2 teaspoon black pepper
  • 1 teaspoon minced garlic
  • 3/4 teaspoon salt
  • 1/4 cup Vegetable/ olive oil
  • 1 cup mixed vegetables
  • 1 medium red bell pepper
  • 1/4 cup crushed tomatoes
  • 1 tablespoon ginger


  1. Heat oil in large skillet over low heat.
  2. Add garlic, red bell pepper, ginger,  black pepper and crushed tomatoes to pan.
  3. Heat for 4 minutes.
  4. Add mixed vegetables, salt, cooked tri-color rotini, dill and parsley to skillet.
  5. Cook, stirring, 4 minutes to heat thoroughly.
  6. Serve alone or with grilled chicken.

* My children loved this because it was colorful. I loved it because it is a quick meal to prepare and its also healthy.
