Chicken Noodle Soup

Chicken Noodle Soup


1 tablespoon butter

1/2 cup chopped onion

1/2 cup chopped celery

3 (14.5 ounce) cans low sodium chicken broth

2 cups water

1/2 pound chopped cooked chicken breast

1 1/2 cups egg (no yolk) noodles

1 cup sliced carrots

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/8 teaspoon season salt

1 cube chicken bouillon

1/2 teaspoon black pepper

1/8 teaspoon chili pepper (optional)


In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken broth and stir in chicken, noodles, carrots, basil, oregano, season salt, chicken bouillon and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

**NOTE** This soup was a surprise hit because my son is not a fan of soup and he loved it. I hope you all enjoy it and I will try to post more of the dishes we enjoy.
