Simple Quiche

 Crust:

Ingredients

Directions

  1. In a bowl, combine flour, garlic powder and salt.
  2.  Cut in oil until crumbly.
  3.  Gradually add water, tossing with a fork until dough forms a ball.
  4.  Roll out to fit a 9-in. or 10-in pie plate.
  5. Transfer pastry to pie plate.
  6. Trim pastry to 1/2 in.
  7. beyond the edge of plate; flute edges.
  8.  Bake shell for about 8 minutes at 375 degrees.

Quiche (Filling)

Ingredients:

2/3 heavy whipping cream

3 eggs

1/3 cup chopped onion

1/3 cup green bell pepper

1/3 cup tomato

1/8 teaspoon nutmeg

¼ teaspoon black pepper

¼ teaspoon salt

1 ½ cup shredded mozzarella cheese (part skim)

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Over medium-low heat melt butter in a large saucepan. Add onions, pepper, tomato,  and cook slowly, stirring occasionally, until the pepper/tomato/onion mixture is soft.
  3. In a medium bowl, beat together eggs and cream. Stir in cheese, black pepper, nutmeg, and salt. Spread onion/pepper/tomato mixture in bottom of pastry shell. Pour egg mixture over.
  4. Bake in preheated oven for 30 minutes, or until eggs have set.

I love Quiche and haven’t had it in a while…I made it last night hoping to serve it for breakfast but sadly my children wanted cereal. I love this recipe and hope that you enjoy it. Let me know how it turns out 🙂
