4 Pollock fillets

1 Large onion – thinly sliced (sweet onions work best with this recipe)

1 Large tomato – diced

1 Large Green bell pepper, thinly sliced

1 Tablespoon Apple Cider Vinegar

1 Tablespoon Olive Oil

Black pepper

Salt

Directions:

Heat oven at 375 degrees, sprinkle salt and pepper on fillets. grease a medium size cookie sheet and placed the seasoned fillets. Bake for 15 to 20 minutes. Pull out a skillet and heat oil on low to medium heat. Add onions, peppers, diced tomatoes, Apple cider vinegar and some pepper and salt. Cook for about 15 minutes. You can serve this with brown rice.

I made this recipe for dinner tonight and served it with rice and added some stewed green beans and sweet potatoes and my family loved it. I am very happy that I have finally got my family into loving fish.
